When it comes to cooking i am all about simple recipes and using the freshest ingredients. this dish is an ode to my first ever gyudon from japanese fast food joint, yoshinoya, albeit with a posher cut of beef from my pals at Ryan’s Grocery.

Ingredients:
300g sliced ribeye
2 eggs (fridge temp)
White onion
3 tbsp mirin
3 tbsp sake
3 tbsp soy sauce
3 tbsp brown sugar
Pickled ginger (optional)
Steamed short grain rice
Spring onions for garnish.
Tips:
1. If you don’t have mirin/sake/soy sauce/brown sugar you may use bottled teriyaki sauce instead - it’s basically the same set of ingredients.
2. Once cooked, dunk eggs in ice bath to stop them from cooking further. (my eggs overcooked cuz i missed this step 😅)
